Marohemo Chicken Rice Bowl

Serves 4

Savor the perfect blend of flavors with our Chicken Rice Bowl recipe. A harmony of tender chicken, seasoned rice, and sautéed veggies, topped with creamy goodness and a zesty twist of lime. It's a bowlful of pure delight in every bite!

Ingredients

  • 1 ½ cups rice
  • 2 cups water
  • 1 400g can chopped tomatoes
  • 2 teaspoons minced garlic
  • 1 tablespoon olive oil
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon Red Devil Manuka Smoked Chipotle Powder
  • 2 skinless and boneless chicken breasts – sliced into strips
  • 1 large red onion – sliced
  • 1 red capsicum – sliced
  • 2 cups shredded lettuce
  • 2 large tomatoes – sliced into chunks
  • ½ cup sour cream
  • 1 cup Marohemo Guacamole (see recipe)
  • 1 lime for squeezing

The Magic

  1. Put rice, water, canned tomatoes, garlic, olive oil, cumin, paprika and half a teaspoon of chipotle into a pan. Combine and season with salt and pepper. Simmer for 15 minutes, then remove from heat.

  2. Coat the chicken strips with the other half teaspoon of chipotle, and fry in a pan with a splash of olive oil until cooked. Should be about 3 minutes each side. Try not to overcook as the meat will become tough, just make sure its not pink in the middle. Remove from pan, then add sliced onion and capsicum and cook until tender, about 5 minutes.

  3. Divide the rice mixture evenly between the bowls. Add chicken, onion and capsicum, then lettuce and tomatoes. Top with sour cream and guacamole. Add a dash of squeezed lime juice over the top. 

  4. Add hot sauce if you wish – we would recommend Devils Delight Sweet Chilli Sauce or Heaven n Hell Habanero Hot Sauce of course.
