Marohemo Red Curry Paste

 

Curry paste is one of those fridge staples that we just couldn't live without. It's so easy to use when you need to throw something together at the last minute! It will keep in the fridge for about 3 weeks, but also freezes really well if don't think you'll use it all up in that time.

 

Ingredients

  • 4 red cayenne chillies
  • 4 teaspoons coriander seeds
  • 1 tablespoon lemongrass paste
  • 1 teaspoon black peppercorns
  • 5cm piece of fresh ginger
  • 6 kaffir lime leaves
  • ½ medium brown onion
  • 3 cloves garlic
  • 1½ tablespoons fish sauce
  • ½ teaspoon salt
  • 1 tablespoon lime juice
  • A small bunch fresh coriander
  • ½ tablespoon neutral oil

The Magic

  1. Chop everything roughly and process in a stick blender or food processor to a paste.
  2. Put into a jar or other suitable container with a lid and refrigerate. This is a fresh paste and will last about 3 weeks in the fridge, or it can be frozen.
